Easy Dips

These two cool and refreshing dips are just right for a hot summer celebration:

Roasted Red Pepper Hummus Recipe

Yield: 20 Servings

Calories per serving: 56

  • 4 cloves of garlic
  • 1 (19 oz) can of chickpeas
  • 2½ tablespoons of lemon juice
  • 1 tablespoon of tahini
  • ¼ teaspoon of cumin
  • ¼ teaspoon of cayenne pepper
  • Salt and fresh ground pepper to taste
  • 1 tablespoon of olive oil
  • ½ cup of roasted red pepper, chopped finely
  • Sprig of parsley for garnish
  1. Chop garlic in blender.
  2. Add all other ingredients except for roasted peppers and parsley, and blend until smooth.
  3. Transfer to a serving bowl and stir in chopped roasted peppers.
  4. Garnish with parsley and serve with pita wedges, crackers or chips.

Spinach Dip Recipe

Yield: 10 servings

Calories per serving: 76

  • 1 small shallot, peeled
  • 1 (5-ounce) can of water chestnuts, rinsed
  • 3 tablespoons of buttermilk ranch dressing
  • ½ cup of cream cheese
  • ½ cup of low-fat cottage cheese
  • ¼ cup of low fat plain yogurt
  • Salt and fresh ground pepper to taste
  • ¼ teaspoon of garlic powder
  • 6 to 8 ounces of baby spinach
  • 2½ tablespoons of chopped green onion
  1. Chop shallots and water chestnut coarsely in food processor.
  2. Add cream cheese, cottage cheese, yogurt, dressing, salt, and seasonings, and process until blended.
  3. Add spinach and chives, and process until just combined.
  4. Serve with crackers, chips or toasted chunks of bread.

Colorful Summer Salads

Here are a few summer salads that bring all the colors of an Independence Day fireworks display to your appetizer menu:

Tri-Color Salad Recipe

Yield: 6 servings

Calories per serving: 36

  • 1 tablespoon of minced shallots
  • 1½ tablespoons of balsamic vinegar
  • 1 tablespoon of lime juice
  • 3 teaspoons of olive oil
  • 3 teaspoons of water
  • ¼ teaspoon of brown sugar
  • Salt and freshly ground pepper to taste
  • ¼ cup chopped, fresh cilantro
  • ¾ cup of diced colorful peppers (red, green, orange, yellow and/or purple)
  • 2 heads of Belgian endive, torn to bite size pieces
  • ½ head of radicchio, torn to bite sized pieces
  • 1 (5-ounce) package fresh baby arugula
  1. Whisk first eight ingredients together in a large bowl.
  2. Add remaining ingredients and toss to coat vegetables with dressing.

Herbed Beets with Spinach and Goat Cheese Recipe

Yield: 6 Servings:

Calories per serving: 63

  • 3 medium beets, a combination of red and golden
  • ½ cup of balsamic vinegar
  • ¼ cup of olive oil
  • ¼ teaspoon of tarragon
  • ¼ teaspoon of dill
  • ¼ teaspoon of savory
  • 1 teaspoon of minced shallots
  • Salt and fresh ground pepper to taste
  • ¼ cup crumbled goat cheese
  • 1 package (10 oz) of fresh baby spinach
  1. In a large saucepan, cover beets with water by 2 inches, and bring to a boil.
  2. Reduce heat and simmer about 40 minutes, until beets are tender. Drain and let stand until cool enough to handle.
  3. Trim the ends, remove the skins and cut into thin slices.
  4. Whisk together oil, vinegar, shallots and herbs.
  5. In a large bowl, place spinach and top with goat cheese and beets.
  6. Drizzle with dressing and serve.

Almost everyone loves appetizers they can pick up with their hands. These finger foods are no exception.

All-American Cheese Balls Recipe

Yield: 7 Servings

Calories per serving: 560

  • 2 8-ounce packages of Neufchatel cheese, softened
  • 1 1-ounce package of powdered ranch dressing mix
  • ½ teaspoon of onion powder
  • 1 cup of cheddar cheese, grated
  • 1 cup of jack cheese, grated
  • ½ cup of block American cheese, grated
  • 1 cup of walnuts, chopped
  • ½ cup of cashews, chopped
  1. Mash Neufchatel cheese down in a medium size bowl.
  2. Mix in cheese, dressing mix and onion powder.
  3. Shape mixture into balls, roll in chopped nuts and arrange on serving plate. Place an American Flag toothpick in each ball. Cover and refrigerate until ready to serve.

Veggie Skewers Recipe

Yield: 10 servings

Calories per serving: 51

  • 10 small buffalo mozzarella balls
  • 10 fresh basil leaves
  • 10 yellow cherry tomatoes
  • 10 thick slices of red bell pepper
  • 10 wooden skewers
  • Olive oil, to drizzle
  • Sea salt, oregano and fresh ground pepper, to taste

Thread first four ingredients onto 10 small wooden skewers. Drizzle a little oil on each and sprinkle with seasonings.

Sweet Expectations

Satisfy your craving for sweetness and salt with these tempting snacks:

Red, White and Blue Fruit Cup

Yield: 4 servings

Calories per serving: 149

  • 2 cups of fresh blueberries
  • 2 cups of fresh strawberries, sliced
  • 1 cup of shredded coconut

Spoon a layer of blueberries, a layer of coconut and then a layer of strawberries into four glass ice-cream dishes.

Sweet and Salty Trail Mix

Yield: 10 servings

Calories per serving: 275

  • About 30 mini pretzels
  • 1 cup of corn flavored cereal
  • 1 cup of wheat flavored cereal
  • 1 cup of rice flavored cereal
  • 1 cup of salted peanuts
  • ½ cup of semi-sweet chocolate chips
  • ½ cup of butterscotch chips

Combine all ingredients in a large bowl.
