Fun Easter Cupcake Recipes

Easter Cake Recipes
Your Easter cupcakes start with the cake. Choose your favorite flavor, or make a dozen of each.
Vanilla Cupcake Surprise Recipe
Here’s a cupcake with a surprise in the center! A chocolate egg inside each vanilla cupcake is so delicious to bite into! Recipe makes two dozen cupcakes.
Ingredients:
- 2-1/4 cups all-purpose flour
- 2-1/2 teaspoons baking powder
- 1 teaspoon salt
- 2/3 cup butter, softened
- 1 cup brown sugar
- ¾ cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1-1/4 cups milk
- 24 small milk chocolate eggs, unwrapped
Directions:
- Preheat oven to 350 degrees Fahrenheit. Grease 24 muffin cups, or use paper liners.
- Sift together flour, baking powder and salt. Set aside.
- In large bowl, cream together the butter, brown sugar and white sugar until fluffy. Beat in eggs, then mix in vanilla.
- Mix in the flour mixture slowly, alternating with milk, until all are mixed together.
- Fill each muffin cup 1/3 full, then place a chocolate egg in the center of each cup. Fill with remaining batter so each cup is 2/3 full.
- Bake for 18 to 20 minutes, until golden and tops spring back when tapped.
- Let cool before frosting.

Chocolate Cupcake Recipe
You can’t go wrong with a classic! Recipe makes two dozen chocolate cupcakes.
Ingredients:
- 1-1/2 cups all-purpose flour
- ¼ teaspoon baking soda
- 2 teaspoons baking powder
- ¾ cup unsweetened cocoa powder
- 1/8 teaspoon salt
- 3 tablespoons butter, softened
- 1-1/2 cups white sugar
- 2 eggs
- ¾ teaspoon vanilla extract
- 1 cup milk
Directions:
- Preheat oven to 350 degrees Fahrenheit. Grease 24 muffin cups, or use paper liners.
- Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
- In large bowl, cream together the butter and sugar. Add eggs, beating well, then add vanilla.
- Mix in flour mixture slowly, alternating with milk until all is mixed together.
- Fill muffin cups a little over halfway full.
- Bake for 15 to 17 minutes, until inserted toothpick comes out clean.
- Let cool before frosting.
Easter Cupcake Frosting Recipes
Half the fun of eating a cupcake is licking the frosting off your fingers when you’re done. Choose your favorite frosting, and don’t forget to lick the spoon.
Rich Chocolate Frosting Recipe
So rich and good!
Ingredients:
- 1 cup butter, softened
- 4-1/2 cups confectioner’s sugar
- 1-1/4 cups baking cocoa
- ½ teaspoon vanilla extract
- ½ cup milk
Directions:
- In a large bowl, cream butter. Slowly beat in sugar, cocoa and vanilla.
- Add milk slowly, mixing until frosting reaches the desired consistency.
- Use knife or spatula to spread on cupcakes.
Cream Cheese Frosting Recipe
Creamy and delicious, and the white color is a good backdrop for decorating.
Ingredients:
- ½ cup butter, softened
- 8 ounces cream cheese
- 3 cups confectioner’s sugar
- 3 teaspoons vanilla extract
Directions:
- In large bowl, beat together butter and cream cheese until blended.
- Add powdered sugar and vanilla. Beat until smooth.
- Use knife or spatula to spread on cupcakes.

Decorating Ideas For Easter Cupcakes
Once your cupcakes are baked and frosted, the fun begins! Decorate your cupcakes to add to the Easter festivities. All eyes will be on the dessert table when your whimsical treats are displayed.
Easter Bunny Cupcake Decoration
Decorate your cupcakes with an adorable bunny face. Start with frosted cupcakes of any color. Directions will decorate 12 cupcakes.
You will need:
- 2 cups sweetened flaked coconut, chopped very fine
- ¼ cup pink decorating sugar
- 12 regular size marshmallows
- 24 thin pretzel sticks
- 12 mini marshmallows
- 24 brown M&M mini candies
- 12 red M&M candies
- 6 black licorice laces
Directions:
- Roll frosted top of cupcakes in coconut to cover.
- With scissors or knife, cut large marshmallows in half crosswise. Dip cut side of marshmallows into pink sugar. These will be the bunny’s ears.
- Push one pretzel stick into edge of each sugared marshmallow, then push pretzel end into cupcake to position ears.
- Place two ears on each bunny, pink sugared side facing forward.
- Position two brown M&M mini candies on each cupcake as eyes.
- Center a red M&M below the eyes for the bunny’s nose. Repeat on each cupcake.
- Cut the mini marshmallows in half to use as cheeks. Place one on each side of the nose.
- Cut the black licorice laces into small pieces to use as whiskers. Use three on each side of the bunny’s cheeks. Position so whiskers fan out slightly.
Easter Basket Cupcakes
These cute Easter basket cupcakes are easy to decorate and sure to be a hit! Start with any frosted cupcakes. Directions will decorate 12 cupcakes.
You will need:
- 2 cups sweetened flaked coconut (or substitute with frosting)
- Green food coloring
- Red licorice laces
- Bag of large jellybeans, peanut M&M’s or other egg-shaped candy
Directions:
- Place coconut in bowl, and tint with green food coloring until you reach your desired shade. If you don’t like coconut, simply use green frosting.
- Roll frosted top of each cupcake in the coconut to serve as grass.
- Position 6 to 8 egg-shaped candies in the center of each cupcake.
- Cut red licorice laces to desired length to serve as the basket handle. Push each end of the licorice into opposite sides of cupcake so the licorice curves over the top.
Chicken In An Egg Cupcake Decoration
These are extra cute and a fun way to use Easter Peeps. Start with any frosted cupcakes. Directions will decorate 12 cupcakes.
You will need:
- 2 cups sweetened flaked coconut
- Green food coloring
- Bag of any egg-shaped candies, such as peanut M&Ms or jellybeans
- 12 marshmallow Peep chicks
- 6 White Mystery Airhead candy strips
Directions:
- Place coconut in bowl, and tint with green food coloring until you reach desired color.
- Roll each frosted cupcake in coconut to look like grass.
- Position a Peep chick in the center of each cupcake.
- With a scissor, cut the Mystery White Airheads in half, then trim each piece into an oval shape. Further trim one side to resemble the cracked edge of an egg.
- Position the eggshell in front of the Peep so it looks like the chick has just hatched.
- Position 5 to 7 egg-shaped candies around the outside edge of the cupcake, pressing them into the coconut grass.
