When you start to feel a chill in the air, it's time to dust off your cookie recipes and start planning your fall and winter baking projects. Oatmeal Raisin Cookie Recipe

The trick to making a chewy oatmeal cookie is to chill the dough before baking. You'll notice the difference.

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups rolled oats
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup softened butter
  • 1/3 cup brown sugar (light), packed tight
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract

Directions

  1. Combine flour, baking soda, cinnamon, nutmeg and salt. Stir or whisk to incorporate.
  2. Add oatmeal, raisins and nuts.
  3. In a separate bowl, blend butter, brown sugar, granulated sugar, eggs and vanilla until smooth and creamy.
  4. Add the dry ingredients to the butter mixture in small increments.
  5. Refrigerate for an hour.
  6. Drop by rounded spoonful onto a baking sheet (about an inch-and-a-half apart).
  7. Bake in a preheated 350 degrees F oven for 10 minutes. Bake an extra couple of minutes if the dough is very cold.

This recipe makes about 2 dozen cookies.

Butterscotch Bar Recipe

These chubby bars are all you need to make your next coffee break just about perfect.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup softened butter
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar (tightly packed)
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking oats
  • 2 cups butterscotch morsels or chips

Directions

  1. Combine flour, baking soda, cinnamon and nutmeg.
  2. In a separate large bowl, beat butter, granulated sugar, brown sugar, eggs and vanilla until smooth.
  3. Add flour mixture to the butter batter in small increments until fully incorporated.
  4. Add the oats and butterscotch chips to the batter.
  5. Spoon dough into greased 15" x 10" pan. Distribute the dough evenly to all four corners.
  6. Bake in a preheated 375 degrees F oven for 18-20 minutes.

  • 1 can pumpkin filling (15 ounce)

Directions

  1. Combine all ingredients in a large bowl and stir to incorporate.

  3. Bake in a preheated 350 degrees F oven for 18 to 20 minutes.

Ginger Spice Cookie Recipe

Ingredients

  • 2- 1/4 cups flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 cup butter (softened)
  • 1 cup brown sugar (light)
  • 1/4 cup dark molasses
  • 1/2 teaspoon vanilla extract
  • 2 large egg whites

Directions

  1. Combine flour, baking soda, salt, and spices.
  2. In a separate, large bowl, beat butter, brown sugar, molasses and vanilla extract until fully incorporated. Add egg whites and continue beating or mixing for three to four minutes.
  3. Add the flour mixture to the butter batter in small increments until fully blended.
  4. Chill the dough for an hour.
  5. Form dough into 1-inch balls and roll in granulated sugar.
  6. Place 2-inches apart on an ungreased cookie sheet, and flatten the cookie balls slightly with the bottom of a drinking glass (a ketchup bottle works, too).
  7. Bake in a preheated 350 degree F oven for 8 to 10 minutes.

Peanut Butter Cookie Recipe

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 cup creamy peanut butter
  • 1 cup light brown sugar (packed tight)
  • 1 cup granulated sugar
  • 2 eggs

Directions

  1. Sift flour, baking powder, baking soda, and salt into a medium sized bowl and set aside.
  2. In a separate bowl, blend butter, peanut butter, brown sugar and granulated sugar. Add eggs one at a time.
  3. Combine wet and dry ingredients.
  4. Refrigerate dough for 1 hour.
  5. Roll dough into 1 inch balls and place on an ungreased cookie sheet about 2 inched apart. Flatten each ball with a fork dipped in granulated sugar.
  6. Bake in a preheated 375 degrees F oven for 8 to 10 minutes.

White chocolate and Macadamia Nut Cookies

When you feel like splurging, nothing fits the bill like white chocolate and macadamia nuts. These cookies are worth keeping around for those moments when you need a little TLC courtesy of your oven.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips (or chopped pieces)
  • 1 cup chopped macadamia nuts
  • 1 cup butter, softened
  • 3/4 cup light brown sugar (packed tight)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract

Directions

  1. In a medium sized bowl, combine the flour, baking soda, and salt.
  2. Gradually add the white chocolate and nuts.
  3. In a separate bowl, blend butter, brown sugar, granulated sugar, almond extract and vanilla extract. Add eggs one at a time and mix thoroughly.
  4. Add the dry to the wet ingredients in small increments.
  5. Add the white chocolate and nuts.
  6. Drop dough by spoonful onto an ungreased cookie sheet.

Bold Brownies

The simple brownie is the undisputed king of dessert comfort foods. If you like yours with a rich, chewy consistency and very chocolaty flavor, give this recipe a try:

Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 cup butter (melted in the microwave)
  • 1-1/4 teaspoons vanilla extract
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Combine cocoa and sugar in a medium sized bowl.
  2. Drizzle in melted butter and stir to incorporate.
  3. Add vanilla and continue mixing.
  4. Add egg and continue mixing.
  5. Combine flour and salt and add to the batter in small increments until fully incorporated.
  6. Add walnuts if you're using them. Note: You can also substitute dried cranberries, marshmallows or chocolate chips.
  7. Pour mixture into an 8 inch (greased) pan.
  8. Bake in a preheated 350 degree F oven for 45 minutes. (Avoid cutting brownies into squares until they've cooled.)

Fall Cookie Baking Tips

These tips will help you bake perfect cookies every time:

  • Review all your recipes before you begin, and don't forget to total the quantities of common ingredients like the flour and butter you'll be using. That way you'll have enough of everything on hand.
  • Cook items in like colored baking tins. Dark colored tins get somewhat hotter than light colored tins, so mixing and matching could lead to burnt cookies.
  • Use fresh ingredients, especially baking powder and cream of tartar. They have to be well within their freshness dates to add leavening powder (bubbles) to cake style cookies.
  • Always use the exact ingredients called out in a recipe. Making a simple switch, like from butter to margarine can make a big difference in the consistency of a cookie. Margarine contains about 20 percent water, which will flatten a cookie and tend to make it crunchy instead of chewy.
  • Calibrate your oven. The reading on your oven dial isn't necessarily the temperature inside your oven. Buy a small, portable oven thermometer and double check the temperature. If your setting is high (or low) many ovens on the market have controls that can be adjusted to make them more accurate. If not, make the adjustment manually in your head.
  • Clean your oven. Ovens are designed to bounce heat around the interior cavity to create even heating. A dirty oven will have hot and cold spots where there's baked on gunk. A clean oven will produce better baked recipes -- including cookies.
